History and Uses:
Beets are native to the Mediterranean, but are now grown worldwide.  Both white and red Beets were already known in Sicily 1000 B.C., and varieties of these distinctly-swollen roots were first established in Europe in the Middle Ages.  Since the sixteenth century, Beet Roots have been cultivated for a variety of culinary purposes. Beet is extensively grown both for its sugar content and as a vegetable.  The botanical name, Beta, is derived from the second letter of the Greek alphabet, which the bulbous root is thought to resemble, and vulgaris simply means "common."  Another story tells us that the English word, Beet, is derived from the French, bete, meaning "beast," as ancient cooks were reminded of bleeding animals when cutting up the vegetables.  In ancient folklore, Aphrodite is said to have eaten Beets to retain her beauty, and in folk magic, it is said that if a woman and man eat from the same Beet, they will fall in love.  In Africa, Beets are used as an antidote to cyanide poisoning.  The part of the plant used medicinally is the root.  Beets help normalize the pH of the body, and they also help build the blood.  Borscht is an iron-rich Russian soup made with Beets; however, although they do contain iron, Beets will not help prevent anemia, which many had believed they would.  Primary chemical constituents of Beet Root include saponiside, phytosterol, betaine, leucine, tyrosine, betacyanin, beta-carotene, manganese, potassium and iron.  Beet Root also contains folate and some vitamin C.  Beet Root has a general stimulant and resistance-enhancing action.  This is based on the red pigment, "betaine," an anthocyanin from the flavonoid group.  Consumption of large quantities of Beets can make both urine and stools turn red, which is harmless and should not be mistaken for blood. Beet Root is good for you.  However, Beet Root has, for many years, been used as a treatment for malignant diseases in Europe.  Specific anti-carcinogens are bound to the red coloring matter, which supposedly helps fight against invasive malignant disease and cell damage. Furthermore, Beet Root is said to increase the uptake of oxygen by as much as four hundred percent. Additional studies are taking place to add support to these claims.  The green leafy part of the Beet plant is also of great nutritional value, since it contains beta-carotene and other carotenoids. Carotenoids refer to plant pigments - of which there is a family of about six hundred different known types - and these function as antioxidants. 

Recommended Dosage:
Take two (2) to three (3) Capsules, one (1) time each day with water at a morning or mid-day mealtime.
