History and Uses:
Green Peppers are beneficial to overall health due to their high concentration of phytonutrients. Phytonutrients are biologically active substances that are responsible for giving plants their fragrance, color and flavor and also contribute to the plant's self-defense system by protecting it from pests, viruses, bacteria and excessive sunlight. Evidence indicates that these same phytonutrients may also protect the human body from certain malignant diseases and heart disease. Green Pepper is especially high in vitamin C, and since the body neither makes nor stores vitamin C, a continuous supply must be provided in the food we eat. Normal body cell functioning requires ascorbic acid, as does the formation of healthy collagen (the basic protein of connective tissue), bones, teeth, cartilage, skin and capillary walls. Vitamin C also promotes the body's effective use of other nutrients, such as iron, B-vitamins, vitamins A and E, calcium and certain amino acids. Green Pepper also contains chlorophyll, which is essential to healthy digestion, as well as vitamins, minerals and enzymes. By promoting the formation of strong connective tissue, Green Pepper helps to heal wounds and burns. Stress, fever and infection increase the body's need for vitamin C, and supplementing with Green Pepper can improve immune system function, improve digestion, lower the risk of malignant disease and support good heart health.
